1/4 cup shortening
1 cup sugar
2 eggs
1 cup mashed bananas
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt


  1. Heat oven to 350°F
  2. Grease 15x10x1 pan
  3. Mix shortening, sugar, eggs, bananas, and vanilla thoroughly
  4. Measure flour by dipping method. Blend all dry ingredients and stir into banana mixture
  5. Spread into pan
  6. Bake 20-25 minutes or until golden brown
  7. While warm, frost with icing


confectioner’s sugar
1/4 teaspoon vanilla
1/4 teaspoon almond


Combine icing ingredients to make a thin icing. Add milk a little at a time so that the icing is not too thin.
