1 3/4 cup flour
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg
3/4 cup buttermilk
1/2 cup (1 stick) butter


  1. Preheat oven to 350°F
  2. Grease muffin pan
  3. Sift dry ingredients into a large mixing bowl
  4. Lightly beat the egg
  5. Melt the butter
  6. In a separate bowl, whisk together the egg and buttermilk
  7. Make a well in the center of the dry ingredients
  8. Pour buttermilk mixture into the center
  9. Add butter
  10. Blend with a spatula. Do not overmix; it should still be a little lumpy
  11. Add extras to taste (fruit, cinnamon, etc)
  12. Bake 20-22 minutes

Makes 12 regular muffins or 6 jumbo
