From Mom C.

cabbage (whole head)
1 pound ground beef
1 or 2 eggs
onions (to taste)
salt (to taste)
pepper (to taste)
1/2 cup uncooked rice (1 to 1 1/2 cups cooked. Uncle Ben’s favored, but use what you like)

1 cup tomato soup

  1. Add water to a big cooking pot and put the head of cabbage in.
  2. Steam the cabbage until the leaves get soft and separate the leaves from the head. Set leaves aside. Save the cabbage water.
  3. Cook the rice until tender or almost tender. You should have 1 to 1 1/2 cup cooked rice. We like Uncle Ben’s because it’s a little stickier and that helps to hold the golumpki together.
  4. Prepare the ground beef. Add egg, salt, pepper and rice and mix well. Add a little water if you want it a little more moist.
  5. Roll the ground beef in cabbage leaves.
  6. Over the top, add a layer of cabbage leaves and dab with margarine.
  7. Add a sauce of 1 cup tomato soup and 1 cup cabbage water.
  8. Bake at 350°F for 1 hour.

Makes 8-10 good sized pigs in a blanket
