Ingredients

4 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1 cup evaporated milk
1 tablespoon lemon juice
1 cup shortening
1 teaspoon vanilla
2 cups sugar

Procedure

  1. Preheat oven to 375°
  2. Sift flour, baking soda, and salt together and set aside
  3. Separate eggs; set egg whites aside
  4. Mix evaporated milk and lemon together and set aside
  5. Cream shortening and vanilla together
  6. Add sugar gradually; beat until fluffy
  7. Add egg yolk one at a time, beat thoroughly after each
  8. Add milk/lemon mixture in thirds, alternating with the flour. Beat well after each addition
  9. Beat egg whites until stiff
  10. Fold egg whites into batter
  11. Drop by rounded tablespoons, 3 inches apart on greased cookie sheet or onto parchment paper
  12. Flatten tops with a spoon and sprinkle with cinnamon and sugar
  13. Bake for 10 minutes or until edges are lightly browned.

Makes approximately 7 dozen, depending on how big your drops are!
